Okay, so I have noticed that Dex has been a bit... underused lately (I just finished Neverseen.) I totally understand that some other characters (trying to be spoiler free) were very important to the plotline and that was GREAT don't get me wrong, but it seems like Sophie is paying less attention to him, despite him being her best friend. So will Dex be a bit more prominent in the next book?

Every character is in the books as much--or as little--as the story calls for them to be. And honestly, Dex played a HUGE role in NEVERSEEEN. Many of the crucial discoveries that happen in the book are because of things he does. He just has to work alone sometimes, because that's the way his talent works, but that doesn't make him any less important to the story.
So I can't really say whether he'll be in the next book more or less. He'll be in it as much as the story--and Sophie--needs him to be.

(Caution: May be the weirdest question you have ever gotten) (PS: It's sorta relevant to my last question about eyes :D) So, if Sophie ends up marrying one of the blue-eyed elves, (hopefully Fitz) and happen to have little children elves, wouldn't that mean that she could possibly create a whole new group of elves with brown eyes and animal genetics?
