I'm about to start The Grisha Trilogy (I'm so late!) and would like to know what order should I read them - the trilogy + the tales? Should it be the order that they've been published?

Leigh Bardugo I guess this answer is a bit late, but...

The Grisha folk tales can be read at any time. Though I think they give some insight into Ravka and its relationship to magic and faith, they're independent from the narrative of the trilogy. Think of them as stories that the characters might have heard when they were children.

As for the extras, I'd recommend that you
-read Mal's letter (Shadow and Bone paperback) after Shadow and Bone
-read The Tailor (Siege and Storm paperback) after Shadow and Bone
-read Demon in the Wood (Ruin and Rising Collector's Edition from Barnes & Noble) after Ruin and Rising
