In the Mythos Academy series are all kinds of warriors for example spartans. And these warriors have different powers and they can be a Gybsy. Why is Gwen Frost only a Gybsy and not some kind of warrior too?

In the Mythos world, Gypsies are warriors who have been gifted with magic by the gods. So they can be warriors like Spartans, etc. (like Rory Forseti in the Mythos spinoff series) or they can not be warriors (like Gwen).
In Gwen's case, I thought her psychometry magic was a really interesting power so I decided to focus on that, instead of making her a warrior. Plus, since Gwen doesn't know anything about the mythological world at the beginning of the series, it just made more sense to me not to make her a warrior.
