There are three main books in the series. 'Golden Compass', 'Subtle Knife', and 'Amber spyglass' make up the main trilogy but he also has some short stories and a sequel trilogy set in the universe. I highly recommend reading the main three books, I think they keep getting better and the ending is really good. I haven't read any of the short stories or sequel trilogy books so I can't speak to them.
