Cassandra Gannon Kingu from "Treasure of the Fire Kingdom," for sure. It's explicitly stated that he'd never been with anyone. Galahad in "Best Knight Ever," as well. In my heart, I feel that Avenant in "Beast in Shining Armor" probably is, but I don't think the book specifically mentions it.
