Why did Hoa love Essun specifically? I know form his past he loved Kelenli, but every orogene is presumably a descendant of her? So why in the story does he love Essun, how did he know she would go on to essentially save the world?

Nirkatze When Essun asks Hoa why he is helping her, he says something like "you asked if I was okay." In the first book, when Syenite connects to an obelisk for the first time, she sees the stone-eater trapped inside it, an asks him if he is okay. I don't know if that is the entirety of the reason, but that moment of empathy seems to have given a jumpstart to feeling.
