Sarah, when I was reading "Choosing Theo" I couldn't help but find many similarities with another series that I have read and love. Michelle Howard has a series that is called "A world beyond" the first book "Torkel's Chosen" will give the 'same vibes' of human women choosing the male, males value and protect the female, etc. Check it out, you might like it.

Stolen by an Alien by Amanda Milo also has a similar vibe, and it’s pretty fun.

Look, I know it's hard to find good books to read and although it's not the same vibe as Choosing Theo, I've got to recommend you Homebound by Lydia Hope, it's just really perfect for me and if you like slow build relationship instead of insta-love/lust, the book is just perfect for you too. Also, about Choosing Theo I'm eagerly waiting the second book that is Freeing Luka. The author said she might release it next month.

There is a book called The Metal Smith by Whisky Flowers. It has a prince of a country conquered by a matriarchal country who has to go to school to learn to be a good husband to the woman he has to marry as part of the deal to end the war.

You could check out Sign here for horns, by VK ludwig. It isn't husband school exactly but it is like kamasutra, cleaning, and cooking school. The Vandelar typically live in a RH type situation. So they go to school and pick specialties to give themselves a more attractive resume to land a spot in an estate.
The first books the FMC is looking for someone to help her till and plant her farm, and the MMC has a very different idea of what he is supposed to be plowing XD.

Casey's Warrior's series also has a Matriarchal Society, but it is MMF. Two males for every female and contains men on men scene.
