It is Emmas giraffe from when she was younger, and it is currently in the last boxed she packed and the first box she will unpack and the new place.

George was Emma Saylor's stuffed giraffe that she took everywhere with her as a kid, and still had him in present day. He was left at home packed in the box that she planned to unpack first at the new house.

I thought it was Mimi's deceased husband. Though they called him Joe earlier in the story. I think it had to be a typo missed by the editor because Mimi got all gushy at seeing him in the photo.
