Eric often calls himself a corpse during the nighttime, so does that mean he can be affected by necromancers or other people with similar powers to manipulate/control corpses/the undead? Is he out of luck if he ever comes across such a person during the night?

As with so many answers, it's "It depends."
Necromancers vary wildly in ability, but they also vary somewhat in their methods. At night, Eric is a corpse in the sense he has no biological functions. On the other hand, he still has whatever passes for a soul. A typical necromancer attempting to command a corpse doesn't usually have anyone IN the corpse trying to argue!
