I would recommend The Longest Ride and The Last Song. I say the Longest Ride is the happiest of Spark's novels I have read. Even though there is tragedy, it has positive tone.

Two by Two is the closest novel that ends well even though death plays a part in the book.
Part of the reason Nicholas Sparks's novels are so great is that of the concept of tragedy he introduces in each of his novels.

I've read 15 of his novels and most of it ends tragically. But, if you want something that ends happily, I guess, I suggest A Bend in the Road. :)

I'm so sorry to have to break it to you, but most of Sparks' books are sad and sappy. That's one of the reasons they are so amazing!! But The Notebook has a good ending! Not the movie version, of course, but the book ends on a pretty good note :)
