If you could pick one place, what would be the one place that is a must see in Scotland for someone that hasn't been before?

Great question! If you're looking for a place that represents everything--beautiful landscapes, a stately castle, medieval history--you can't go wrong with Stirling. Edinburgh is a very close second. Glasgow is very artsy, but it's more modern.
