They are those characters that help the hero/heroine complete their quests. So the old woman that the hero gives his food to and she gives him a magic item, or the animals a hero is kind to on his way and help her later in the journey. I'm thinking fairy godmothers would count too.

Fairy Godmothers, Animals, any magical being that helps the character in a tale.
Can't stop dancing would be tales like 12 Dancing Princess where the characters are compelled through magic to keep dancing.
The others I think are clear and leave lots of room for choosing the tales and literature based or inspired by the tales.
For the Can't Stop Dancing, which could be a winner next time I recommend The Wild Swans by Peg Kerr.
