curiously, the human digestive tract has roughly as many neurons as the spinal column. We don’t yet know exactly what they’re up to, but their existence suggests that much more is going on in digestion than simply the breakdown of foods into chemicals.
The human animal is adapted to, and apparently can thrive on, an extraordinary range of different diets, but the Western diet, however you define it, does not seem to be one of them.
It is at the dinner table that we socialize and civilize our children, teaching them manners and the art of conversation.
