I think it should work...new is new whether or not a character chooses it. Even though it's not a "big" move (from the kitchen house to the big house, all on the same plantation), it is nonetheless a significant move (different jobs, different social circles) and sounds like it's a major plot point.

Snail will def fit here. I would say no to the combo (though I like where your head is it, made me chuckle..."escargot" is when it is food, like "steak" or "beef" would be acceptable for 10.7 but not "cow").
