The Last Boy: Mickey Mantle and the End of America's Childhood Got it on a Kindle sale a long time ago.

No, not all re-reads are fine! Goodreads will update the finish date to this year, so it will count.

And, yes, you can change the rating at any time.
However, note that a book read in 2009 won't count for this year's reading challenge.

Depends how Goodreads tallies them. Usually, the anthology is considered a single book.

Goodreads will silently record your tally throughout the year, then in December, if you've read 100, it will let you know in your year-end tally, which you can share at that time.

The word count question was a tangent. In order to compete in the reading challenge, all you have to do is mark each book you read as "completed" here on Goodreads.
