Really? I can see Percy dying very, very well. It would be a heartbreaking way to end the Heroes of Olympus series because no one really expects Percy to die after The Last Olympian.

But then again, with RR planning the super crossover series, Percy has to live long enough to say Carter's name.

I think Percy has barely escaped death enough times that it wouldn't be out of the blue for him to die, if Heroes of Olympus was aimed at a more mature audience. But it's not, so I'm actually expecting everybody to live. It's a given that he'll live, but I think RR has made this series violent enough that it wouldn't break the tone of the story (MoA was pretty dark, don't know about HoH) so other than the audience, I don't see any problems.
