Nicks initial attraction to Valerie was that she was frightened for Charlie. Nick was the hero that was going to make her son well again. She was also immensely attracted to him. He loved the attention.
Apparently she was pretty but nothing special. (Tessa completely overlooked her in the Book Store the night they met because she couldn't imagine Nick being with a woman like her.) Nick only saw and cared about the glory of being "Mr Superstar".
He was feeling so sorry for himself because he wasn't being "worshipped" at home to his satisfaction and loved the attention Valerie gave him. (I expect he was getting about as much attention at home as he was giving to his family. He didn't seem to spend much time worrying about them.)
Valerie on the other hand seemed to be thinking only about her own pleasure (even ahead of her worry over her son) and she didn't care who got hurt as long as she got Nick. Disgusting woman in my opinion.

I have heard previously that when men have affairs the women they have affairs with are less attractive than the wife. This is probably not true all of the time but honestly, I don't think looks are a factor most of the time.
