I’m a chef, and have made tons of granola for restaurants and in my home kitchen. Without having made these exact recipes this is my advice: I would interpret the “basic recipe” as the oats, coconut oil, honey or maple syrup, and cinnamon. For the Granola Mexican I would add the ingredients listed before baking, and then add nuts and optional mix ins. For the Chai-spiced I would add the additional spices before baking, and then add in the candied ginger after. For the Power granola I would add the shredded coconut before baking, and the other ingredients after baking (do keep an aye on the coconut by staring it around on the tray if it looks like it’s getting too brown.) Personally I like using coconut chips, toasting them separately and then mixing them in. Hope this helps!(less)
