He has a number of sourdough recipes (maybe a quarter to a third of the recipes) and he provides guidance on using fresh yeast or active dry instead of instant. He uses instant in the recipes as that is most common for home bakers, but it is not essential and many of his recipes rely on starters of various kinds. That being said, I have not yet baked with sourdough, so I can't speak to whether or not it's helpful. This might be a good one to try to get at the library first if you can.(less)
