Can anyone recommend recipes in this book that are not too high in sugar? I know it's ironic but I love this chef but don't love sugar.

Has anyone tried the chocolate cake recipe, supposedly the world's best? I have and I must say I don't agree with the claim whatsoever! It turned out claggy and cleaved to the palate. The ganache was good, though not enough to compensate for the disappointing cake itself.
