I don't have specific recipes to suggest, but I've had success with many recipes in the book while reducing the sugar by about 20%. I've made several cakes (blueberry almond and rhubarb) and loaves this way, for example. If you check Eat Your Books website, other bakers have done this too. Hope that helps.
