Last week I posted my "fast food" breakfast on
Instagram and I realized I haven't posted here about one of my favorite breakfasts. I was in the car just after school drop-off with my pretty cup of chia pudding and berries. In the rush of making kids breakfasts and lunches I don't always remember or have time to feed myself a nutritious breakfast. So chia pudding is my go-to. I take 1 minute to shake almond milk and chia seeds together before bed and I have an instant breakfast ready in the morning. I will admit that I was not a fan of chia pudding the first time I tried it. However, I've grown to absolutely love chia pudding and even my cereal loving husband is on board and gets really excited when I've made a big batch. Chia is a fantastic source of plant based protein and energy. This superfood was first used by the Aztecs as early as 3500 BC! These little seeds swell in liquid, forming a gelatinous outer layer a bit like tapioca.
