Wheat Watch: Broth
Broth is called for in a number of Wheat Belly Cookbook recipes. It is a wonderful ingredient to use in cooking and sauces to add flavor. However, as with virtually all processed foods, many brands pose a wheat/grain exposure hazard. Take a look at the ingredient list of this brand of beef broth:
The hydrolyzed vegetable protein is sourced from wheat, corn, or soy. While the protein itself may or may not pose any risk itself, it is often contaminated with other wheat/grain proteins that can trigger grain re-exposure reactions, such as bloating, diarrhea, and joint pain. Likewise, the caramel color also poses a potential wheat/corn exposure.
In the Wheat Belly lifestyle, we alwqys try to stick to real, single-ingredient foods whenever possible. However, some processed foods can be helpful for convenience and as timesavers, such as mayonnaise, salad dressings, and broths. When you do resort to processed foods, always be on the lookout for wheat in all of its varieties of forms, corn likewise, the two most common hidden grain ingredients.
You could make your own broth, of course: not only do you not chance inadvertent wheat/grain exposures, but it tastes so much better and is has greater nutritional value (e.g., hydroxyapatite and proline from bones, cartilage, and connective tissue).
