Cuban Black Beans and Rice
Serves 4
1 cup brown rice
2 cups water
2 TBSP olive oil
1 medium yellow onion, chopped
1 red bell pepper, chopped
4 cloves garlic, chopped
½ tsp chili powder
1 can diced tomatoes, with liquid
2 cans black beans, rinsed and drained (or 3 cups cooked black beans)
Optional: Cilantro and lime
Toast rice in a dry pan, over medium-low heat, until fragrant and toasted, 3-5 minutes. Add 1 cup water and salt to taste. Cover and bring to a boil. Reduce heat to medium-low and simmer, covered, until water is absorbed, about 1 hour. Uncover, fluff rice and set aside.
Heat a large skillet over med-high heat and add oil. When hot, add onions and cook until softened, 1-2 minutes. Add peppers, garlic and chili powder and cook, stirring occasionally until softened, 2-3 minutes. Add diced tomatoes with their liquid and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Stir in beans, then simmer five minutes more. Season with salt and pepper, and serve beans over rice with a lime wedge. Garnish with cilantro or parsley if desired.
