Have a spooktacular Halloween!

The day's finally arrived! Halloween is here! I hope you're ready for the ghouls and goblins and Elsas and Spidermans who'll line up at your door. :)

Thanks to all the authors who came to party on my blog this month. If you haven't read through their interviews, you should - their spooky stories and ghostly encounters will give you the perfect chill for a dark All Hallow's Eve. I'm always surprised at just how many people have experiences that they can't explain. If I weren't already a believer, it would change my mind.

I came across this recipe, and it sounded yummy - and healthy! So I thought I'd share. I always love new treats, don't you?

PUMPKIN OATMEAL COOKIES



Ingredients2 cups all-purpose flour1 1/3 cups quick or old-fashioned oats1 teaspoon baking soda1 teaspoon ground cinnamon1/2 teaspoon salt2 sticks butter, softened1 cup packed brown sugar1 cup granulated sugar1 cup pureed pumpkin 1 large egg1 teaspoon vanilla extract3/4 cup chopped walnuts3/4 cup raisins OR chocolate chips
Directions PREHEAT oven to 350° F. Lightly grease baking sheets. COMBINE flour, oats, baking soda, cinnamon and salt in medium bowl. Beat butter, brown sugar and granulated sugar in large mixer bowl until light and fluffy. Add pumpkin, egg and vanilla extract; mix well. Add flour mixture; mix well. Stir in nuts and raisins. Drop by rounded tablespoons onto prepared baking sheets. BAKE for 14 to 16 minutes or until cookies are lightly browned and set in centers. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely. Then gobble like ghouls!
