Soft, sweet, ooey, gooey, sugary, candied, creamy, toothsome, delicious, cloying, saccharine, luscious, lush, tempting FUDGE! There’s a whole lotta chemistry to fudge. It’s more complicated than cooking meth (from what the Lady Biest gleaned from watching people cook meth on Breaking Bad, anyway). Forming a fondant is no picnic, fudge-slingers have to bust a nut to keep vibrations and seed crystals from causing too rapid a crystallization. Controlling the crystallization of the supersaturated sugar solution is the key to smooth fudge. Suck on that.
Now roll me in fudge and throw me to the firefighters.
