Crystallized Flowers from S. Davis found in POWER FLOWERSIngredients:2 large egg whites, at room temperature1 teaspoon water1 dozen pesticide-free edible flowers, such as violets, marigolds, rose petals1 cup superfine sugar
Combine the egg whites and water, beating lightly with a fork (do not overbeat).Dip a paint brush in the egg whites and paint a flower, covering the petals thoroughly but not excessively.While still wet, gently sprinkle with superfine sugar.Put the crystallized flowers on a sheet pan lined with waxed paper.
