Here’s a soup recipe I tried last month when I was looking for something new. It’s hearty enough for dinner when combined with a salad. Fresh french bread on the side is optional. :)
Stuffed Green Pepper Soup8 oz hamburger (ground turkey would lighten the calories)
1 28 oz can tomato sauce
1 28 oz can diced tomatoes (I’d replace both of the above with small garden tomatoes in the summer-some diced, some blended)
1 cup cooked rice (brown will give your soup a deeper, nutty flavor)
1 28 oz can beef broth
2 tbsp brown sugar
2 tsp salt
1/2 tsp pepper
Fry meat into crumbles, drain off the grease, then all all the other ingredients back into your pot. Cook 45 minutes.
This soup freezes well for work lunches (as long as you have a microwave.)
