Guest Post - Allyson Lindt - Learning New Tricks

I pondered for while what to write my post about, and it hit me. The holidays are about friends, family, and food. Fortunately for me, Archer, the hero in my new release, Learning New Tricks, is a fantastic cook. I mean, dude makes pancakes from scratch… just because.
Keep in mind though, he’s been a bachelor and living on his own for a while. So when I asked him about his favorite dishes to make, some of his answers were a little… unusual. I’ve tried them all, though, and they’re all tasty.
For instance, this one:
Stuffed French ToastThis makes 2 servings, and Archer likes to turn the left-over egg mixture into scrambled eggs to serve on the side, but that’s completely up to you
Ingredients(Toast) - 1 loaf unsliced French bread (the crusty kind you find fresh in the bakery) - 6 large eggs - 1/4 cup milk - 1 tsp vanilla - 1/4 tsp cinnamon
(Filling) - 3 oz cream cheese, softened - 1 tbsp orange marmalade
And grab your favorite fruit topping or syrup to top it all off. Strawberries and whipped cream, are yummy but pick and choose and try different things.
Instructions: - Beat eggs, milk, vanilla, and cinnamon in a bowl large enough for the bread slices, and set aside. - In a separate bowl, mix the cream cheese and marmalade until it's well blended - Slice the bread so every other slice isn't cut all the way through. In other words, you want 4-6 six pieces of 2 slices of bread stuck together at the bottom, so a kind of pocket is formed. - Stuff the cream cheese mixture into the bread 'pockets' - Preheat a non-stick skillet on medium heat on the stove - Dip each bread/cheese pocket in the egg mixture right before you cook it, cook each side until golden brown, about 2-3 minutes each side. - Serve warm with your favorite French toast topping
