Beer enhanced slow cooker chili for a chilly day



The first crisp days of autumn call for chili. This recipe can be assembled in 15 minutes and then left to cook in the slow cooker, while you watch a football game or go for a leaf watching hike with your dogs.



Ingredients:



1 lb beef stew meat

1 red bell pepper

1 medium onion

1 bottle beer of choice

1 14 oz can diced tomatoes

1 small can of tomato paste

1 14 oz can chili beans

1 14 oz can black or kidney beans

1/2 can chicken stock or water to thin chili if needed

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon coriander

1 teaspoon seasoned salt

1/2 teaspoon garlic powder

Hot sauce or cayenne pepper (optional)



Directions:



1. Brown stew meat.



2. Chop onion and bell pepper and place in bottom of slow cooker, add browned meat and remaining ingredients.



3. Cook on low for 8 hours, or 4 - 6 hours on high. Taste and adjust seasonings.



Serve with toppings of shredded cheddar, sour cream, frito chips.
