Sigrid's Carrot Cake – My Favorite Easter Treat

This is one of my favorite Eastertime recipes from the PW Cooks archives—Easter, because of the carrots, which makes you think of bunnies, which are a sign of fertility, which I guess you could turn into a symbol of new life, which is what Easter is all about.
