A New Twist on Eggnog with Alisha Paige and Ruby Vines!

Thank you, Sky for having me over for your fun Christmas Blog Event! Big hugs, sweetie!I like to try Christmas traditions from other cultures and I was excited to find this yummy recipe for Coquito which is Latin eggnog! And boy, let me tell you, it is YUMMY!

Coquito is traditionally served in Puerto Rico; made with rum, eggs, coconut milk, coconut cream, sweet condensed milk, cinnamon, nutmeg, and cloves.
YOU NEED:2 cans coconut cream1 can sweetened condensed milk1 can evaporated milk1 teaspoon vanilla extract2 1/2 cups of rum1 tablespoon ground cinnamon1 tablespoon ground nutmeg(MAKE WITHOUT RUM FOR THE KIDS AND IN CASE YOU'RE OUT CAROLING IN THE SNOW..CAUSE YOU WILL GET LOST IF YOU'RE DRINKING THIS STUFF!!!)

(HOW WE MAKE EGGNOG ON MY FARM IN TEXAS!!!)

Blend it all in a blender on high and serve with ice! This is very strong but so yummy so be careful! TIP: SIP THIS BY THE FIRE AND CUDDLE WITH THE ONE YOU LOVE!! And what better to go with Coquito than Eggnog Fudge? My kids love to help me make this! YOU NEED:1/8 cup REAL butter2 3/4 cups white sugar1 cup WHOLE FAT eggnog6 oz. white chocolate chips1 1/2 cups mini marshmallows1 cup chopped almonds1/2 teaspoon cinnamon1 pinch nutmeg Directions:~ Line a 9x9-inch pan with aluminum foil; set aside.~ In a heavy bottomed saucepan, add eggnog and sugar, bring to a rolling boil over medium to med-high heat (watch that mixture does not boil over the pot, if boiling to hard, turn down heat slightly, but continue a rapid boil), stirring constantly; boil for 2 minutes (this must be timed for exactly 2 minutes).~ Remove from heat; stir in the marshmallows, cinnamon and pinch of nutmeg~ Put saucepan back on stove; bring back to a rolling boil for another 6 minutes, stirring constantly, again, turn down the heat if mixture is boiling to hard.~ NOTE: The mixture will start to turn a brown color, which is normal.~ After boiling for the full 6 minutes; remove from heat; add the butter, vanilla chips and nuts.~ Stir rapidly, until mixture has a glossy appearance, and the chips and butter are well mixed.~ Pour the mixture into the prepared foil-lined pan.~ Cool at room temperature.~ Remove from pan lifting up sides of foil.~ Remove the foil from the fudge; cut in small squares.I hope you enjoy these yummy recipes with your family! Sky here. OMG, Alisha, I'm not sure what recipe sounds better!!! DELICIOUS! I think I'll probably start with the Coquito. Ha! Might not be able to make the fudge afterward though. LOL.
