Corned Beef Hash1 medium potato per person, any variety
1/2 medium onion per person
1 ounce corned beef per person (prepackaged, deli or leftover brisket)
Salt
Pepper
Olive Oil
Butter
Drizzle oil into frying pan.
Scrub potatoes. Peel or leave the skin on for more nutrients and fiber. Slice into easy thin wedges.
Wash and peel onion. Slice into easy thin wedges.
Heat over medium flame until sizzling, reduce heat to low.
Shake on salt and pepper. Cover and let fry.
When potatoes are beginning to brown, stir and add two pats of butter. Top with thinly sliced ribbons of corned beef. Cover.
When potatoes and onions and fully cooked, it's time to serve.
