Greek Chickpea Soup with Spinach
Chop:
2 cloves garlic
2 yellow onions
Dice:
1 stalk celery
1 sm. carrot
1 leek
In large pot, saute the vegetables in 1/4C olive oil until the onion is translucent.
Add 5 C. vegetable stock (I use Better Than Bullion paste). Bring to boil and cook over medium heat for about an hour. Add one can (drained) chickpeas and continue heating.
