Anthony Bourdain says Foie Gras is one of the ten most important flavors of gastronomy. I wonder what the other 9 are. I know for me that red bean paste that goes in breakfast buns and sushi sometimes is definitely one, as well as the broad flavor concept 'pickled'. But beyond that, I'm not sure. What would be on your list?
