Wed, 12:04 : Mom is here. We're bottling approx. 100 bottles of sherry today. Most are dry, 19% alcohol. About 15 bottles will be 16% sweet sherry. Wed, 12:06 : This is the culmination of a year of aging in the carboys. Only one carboy in 5 produced the sweet sherry that needed no blending. Wed, 12:08 : The remaining 4 carboys finished drier. I fortified the combined wine with Alcool and white rum. Has a very delicate flavour, very clear. Wed, 12:09 : We aren't adding sugar to the fortified sherry. Wed, 12:10 : I may not be very sensible if I tweet later. Wine tasting, you know.
