Things I Have Learned About Sorbet Recently

Strawberry-peach works really, really well.Strawberry-cherry works great as sorbet, but not so well as soda flavoring.Blueberry-peach also works really well, but nobody will believe you when you tell them that's what it is.You can in fact make sorbet pops. The trick is A) to leave the booze out of the mix, so it crystallizes harder, and B)scooping the finished product into molds REALLY DAMN FAST.Finding actual popsicle sticks, as opposed to lollipop sticks, to put them on, is also a good idea. Lollipop sticks work, more or less, but they don't have a whole helluva lot of surface area pressed up against the sorbet portion of the affair, and that tends to produce sliding lumps of sorbet making their way slowly down lollipop sticks, and no one wants that.Sorbet pops are very difficult to put out for presentation at a party. Especially a party with lots of people. In July. When it's hot. So, uh, thank you to all the people who ate fast.
