This Slow Cooker Salsa Chicken is a delicious and easy weeknight meal. Just toss everything into the slow cooker in the morning, and come home to a flavorful dinner ready to enjoy. It’s perfect for busy days when you want a homemade meal without all the fuss.

Ingredients: 4 boneless, skinless chicken breasts. 1 cup salsa. 1 cup frozen corn kernels. 1 can 15 ounces black beans, drained and rinsed. 1 teaspoon cumin. 1 teaspoon chili powder. ½ teaspoon garlic powder. Salt and pepper to taste. ½ cup shredded cheddar cheese optional. 2 tablespoons chopped fresh cilantro optional.

Instructions: In the slow cooker’s bottom, put chicken breasts. Put corn, black beans, cumin, chili powder, garlic powder, salt, and pepper in a bowl. Mix them all together. Cover the chicken with the salsa mixture. When the chicken is done, cover it and cook on low for 6 to 8 hours or high for 3 to 4 hours. During the last 15 minutes of cooking, you can add shredded cheddar cheese to the chicken if you want to. Before serving, sprinkle with chopped fresh cilantro.
