Comparing Paella Valenciana from home with that in Valencia itself is a revelation. Classic Valenciana uses chicken and rabbit that we replace with pork. Wet rice fills the paellera to the brim but the original is a thin layer that makes for a lot of “tutong.” Glad to experience this with my favourite niece and Freud not in photo.
