Weekend Roundup
It was a good weekend. We had a change of plans, and Youngest Son invited us for dinner on Father’s Day. I had already planned a pie, so I just took that over there. We swam in there pool, they BBQed awesome steaks and we had such a good time. Truly lovely!
I have to laugh, as soon as I walk in the house, their two dogs, Roxy and Phoebe, herd me to the fridge to get their baby carrot treats. It makes me laugh. Both my grandson and grand dogs know I’m a pushover Daughter-in-law made better cilantro-lime rice than I do. I’m impressed! I’m a middle of the road average cook, and really appreciate those who do it better (even if they don’t believe me, LOL). We also had a nice bottle of wine and just an overall lovely time.
Now for the baking section of this blog. I hadn’t baked in a while and got a little revved up when I got stared I tried this Key Lime Recipe and it turned out as good as I hoped!
I will definitely make that pie again. But OMG it took a truck load of key limes to get the 2/3s a cup of lime juice I needed. I used an entire bag of key limes plus three regular limes. That’s a log of juicing! Still–it was worth it. And I definitely recommend making the crust from this Biscoff cookies rather than graham crackers too. Although I used canned whipped cream because it’s easier to transport than home made whipped cream.
Now…I had one issue. The son that invited us avoids lactose (milk products). I had already promised Wizard the Key Lime Pie, so I made him the chocolate chip cookies he likes.
And then since I had some leftover Biscoff cookies and and non dairy chocolate, I experimented with making some ganache, replacing the heavy cream with the cream in canned coconut milk. It worked! I was pretty excited, so I frosted one side of a Biscoff cookie with the ganache then put on another cookie, and dipped the sandwich cookie in more melted chocolate.
Long story short, Youngest got two kinds of cookies–one made up as I was in a baking frenzy–to make up for him not being able to eat the pie. He seemed happy.
Today I’m back at the computer fighting to write Primal Magic. Eli is part griffin, which makes him part lion, and so full of pride and stubbornness that he’s running headlong into disaster. But will he listen to me?????
