The Hubster likes trying new ceviche recipes. This one came from our supermarket’s flyer.

Scallop Ceviche with Mango and Avocado

scallop cevicheIngredients:
1 lbs uncooked sea scallops, thawed if frozen
1 c lime juice
finely diced red onion
2 t salt, plus more for seasoning
1 jalapeño pepper, seeded and minced
2 T olive oil
1 ripe mango, peeled and diced
1 ripe avocado, pitted and diced.
Salad greens

Instructions:
Rinse scallops; pat dry. Cut into inch size pieces. Place in a large bowl.
