WCW – Creole Potato Salad

I had the pleasure of meeting author Sheila Sobel at Left Coast Crime, and she was kind enough to share this recipe for Creole Potato Salad.

Ingredients:
2 lb Yukon gold potatoes
c diced sweet onion
c diced celery
c diced red bell pepper (reserve 1 T for garnish)
2 T cider vinegar
1 t sugar
c Creole mustard
c mayonnaise
c sour cream
t salt
Cajun seasoning

Instructions:
Place potatoes in lightly salted water to cover in a large pot. Bring to boil on high heat.
