Roasted Cod, Korean Style
Ingredients:
1 T Olive oil
1 large shallot, minced
2 t fresh ginger, grated (see note below)
1 t minced Serrano chilie
c soy sauce
c brown sugar
3 T rice vinegar
3 T water
1 t sesame oil
4 black cod fillets, about 6 oz each.
