When life (or Big Basket) gives you not so sweet pineapples, turn them into pineapple upside down cake! I feel very hawaiian (fitting since I have spent the whole day sitting around in my bathing suit) and also very 70s which is why the filter. Turned out delicious too, even though I only had one egg so used a vegan hack (ground flaxseed and water).
