I threw this recipe together for a potluck on Sunday and there are two things you need to know about it: it takes 10 minutes to make and disappears even quicker.

PEANUT BUTTER OAT BARS 1 1/2 cups rolled oats 3/4 cup pumpkin seeds 2 tablespoons hemp seeds 2 tablespoons chia seeds 1/4 cup cacao nibs 1/2 teaspoon vanilla powder 1/4 cup peanut butter 1/4 cup coconut oil 1/4 cup maple syrup Pinch Himayan salt
Stir together all the dry ingredients then stir in the wet and mix until everything is evenly coated and the mixture is thoroughly moist and sticks together (i.e. isn't crumbly). Press into a lined bread loaf pan and freeze until solid, around 10 minutes. Optional: top with chocolate drizzle!
