Italian is the sort of food I usually cook, and it's hard to name a specific food I like to cook more since they're all pretty similar. Throw some cheese, pasta, and sauce or tomatoes together, and sometimes meat, and ta daaa. I think Ziti is the dish I have made the most often.
Lately I'm trying to branch out a bit more, moving beyond pasta. The other day I made some pretty decent fried rice, but what I'd really like to do next is Mexican. It's time I learned how to make homemade enchiladas.
