D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Raspberry Vanilla Chia, a Superfood Dessert

Happy Weekend, DDScottville Peeps!!!

How 'bout a super-healthy, super-easy and super-delicious superfood dessert?! That's what I've got for you today thanks to my wonderful friend Holly Hurlburt, who found this gem on www.youngandraw.com Thank you, Holly, and Thank you, Young and Raw!!!



Ingredients:

3-4 T chia seeds (white or black)
2-3 T shredded coconut
1/2 t vanilla bean powder or extract
1/4 c fresh raspberries
1/2 c coconut or almond milk
pinch of Himalayan or sea salt
2-3 T hemp seeds *optional add-on
1 t organic honey *optional add-on


Directions:

Combine all ingredients except for the raspberries and allow them to soften for 5-10 minutes. Add your fresh berries (I like to substitute or add blueberries) and enjoy. I put it in a Mason Jar, and sometimes, it's my "breakfast" dessert!!!

Young and Raw does add this note regarding the chia seeds: "Chia seeds can lower blood pressure, so be mindful if you have low blood pressure to enjoy chia seeds occasionally rather than every day in high amounts."

D. D. Scott Accepts The ALS Ice Bucket Challenge!!!

My teeth are still chattering, and I'll be chilled to the bone for the next week, at least!!!

That's right...I accepted the ALS Ice Bucket Challenge!

So much fun for such a great cause!!!

I was challenged by the amazing Johnna White of Downtown Sarasota's Pixie Dust Metaphysical Boutique (one of my fave stores in beautiful Downtown Sarasota). You can get all the scoop on how I was challenged in Johnna's way fun video...yep, that's my name on the fabulous sign she posted on the streets of Downtown Sarasota. As if I could say "no" after that little surprise...LOL!!!

Now you've got me, next to the palm tree in front of my house, dealing with my big ol' bucket of ice. It was so damn cold I'm thinking that it had to have been a special delivery from the North Pole by the big guy in the red suit. :)



Since I've conquered the bucket, I'm passing on the challenge to two more of my fave boutique owners in Downtown Sarasota. So, gear up Christine Baer of Wet Noses Sarasota and Ron Soto of Soto's Optical Boutique - show some love for all of those suffering from or who have suffered from ALS and let's see if together, we can raise enough awareness and support to find a cure.

D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Lentil Loaf (No-Meat Meatloaf)

Happy Weekend, DDScottville Peeps!

Time for another one of my fave Vegetarian and/or Vegan Recipes - Really Good Vegetarian Meatloaf (Really!)



***Got this one from Food(dot)com on Pinterest

Ingredients:

1 cup lentils (I use Bioitalia 100% Organic Lentils from Italy)
1 small onion, diced
1 cup quick-cooking oats
3/4 cup shredded Daiya cheddar cheese
1 egg, beaten
4 1/2 ounces organic ketchup
1 t garlic powder
1 t dried basil
1 T dried parsley
1/2 t sea salt
1/4 t black pepper


Directions:

1. Drain and partially mash lentils

2. Stir in onion, oats and cheese until mixed

3. Add egg, ketchup, garlic, basil, parsley, season salt and pepper

4. Mix well

5. Spoon into loaf pan that has been generously sprayed with olive oil spray and shape by hand into a loaf

***I like to spread a little more ketchup all over the loaf, too.

6. Bake at 350 degrees for 30-45 minutes until top of loaf is dry, firm and golden brown

7. Cool in pan on rack for about 10 minutes

D. D. Scott's Favorite Vegetarian and/or Vegan Recipes: Black Bean and Quinoa Casserole

Here's another one of my fave Vegetarian Recipes - Black Bean and Quinoa Casserole

Another perfect dish for your #MeatlessMonday meals or your #MeatlessforLife lifestyle!!! And if you're worried about getting your protein? Don't! The black beans in this dish gotchya covered!!!

I found this little gem on Pinterest, thanks to the Yankee Kitchen Ninja





Ingredients

1 cup quinoa - cooked per package instructions (usually 1 cup quinoa and two cups of vegetable broth set to boil then cover the pan and reduce heat to simmer or low for about 15 minutes)
4 cage-free, organic eggs
1/2 of 15-oz can of black beans, rinsed
3/4 cup organic cottage cheese
1/3 cup sliced green onions
2 T gluten-free flour
1 t organic baking powder
1/2 t sea salt
1 cup shredded Cheddar cheese (I use Daiya)
Salsa and avocado for serving


Directions

Preheat oven to 375

Prepare quinoa and set aside to cool a bit

In a large bowl, lightly beat the eggs then add the beans, cottage cheese, green onion, flour, baking powder and salt. Stir until well-combined

Fold in the quinoa and add the mixture to an olive oil sprayed, 8" x 11" casserole dish.

Sprinkle the top of the casserole with the cheese and bake for about 25 minutes (until the cheese melts and the casserole is beginning to brown).

Serve with salsa, chopped avocado and/or guacamole

D. D. Scott Discovers Downtown Sarasota!!!

I've got a new DDScottville Project that I'm over the moon thrilled to share with you!

The Sarasota Downtown Merchants Association (SDMA) has asked me to create, write, design and publish a fabulous monthly journal about all of the amazing merchants in Downtown Sarasota!

How fun is that?!

It will start out as an 8-page booklet, and I think we'll be growing very quickly from there!

I can't wait to introduce all of you in DDScottville to the wonderfully talented people making Downtown Sarasota one of most thriving Downtown Communities I've ever been part of. The cool part is that, even when you're not in Downtown Sarasota, you can be part of the magic from your living rooms as almost all of the merchants have terrific websites and blogs to keep you in-the-know and full of wonderful online shopping resources.
