What’s Cooking Wednesday – Bay Scallop Ceviche

Hubster found this in the current issue of Food Network Magazine, and it’s pretty darn good. It’s spicy, so adjust the heat to your personal taste.

Bay Scallop Ceviche

1 pound bay scallops, cut into 1/2-inch pieces
1 1/2 cups fresh lime juice (from about 12 limes), plus more if needed

Retreating to Move Forward

Franciscan Retreat CenterEarlier this month, I participated in my first writers retreat, sponsored by the Rocky Mountain Fiction Writers. I’ve belonged to the group for a number of years, but as a long-distance, on line member, since most of their meetings are too far away. However, when I saw that their retreat would take place within an hour’s drive, I jumped at the chance to give it a try.

While I was at the Rocky Mountain Fiction Writers Retreat, all meals were included. Here’s a sample of what they fed us. We did NOT go hungry. My favorite (aside from the desserts) was the great salad bar offered at lunch and dinner every day.
