The crisp, golden skin split to allow a perfect square of rich yellow butter to melt into the fluffy mash with a sprinkling of fresh chives over top. The herbs had been clipped just this morning from the garden Paul maintained in his backyard. The salad balanced in such a perfect tower that Alex wasn’t sure she’d get it to the table without having it topple over. A crystal wine glass filled with jewel-toned red wine completed the meal.”
