One-Pot Spaghetti Squash and Meat Sauce (Pressure Cooker and Slow Cooker)
Make meat sauce AND Spaghetti Squash at the same time with this delicious one-pot meal ready in under thirty minutes when made in the pressure cooker! To be completely honest, my kids don’t care for spaghetti squash so I boil some pasta on the side for them to serve with the meat sauce – everyone’s happy!

Madison’s Favorite Slow Cooker Beef Tacos
Made from scratch in the slow cooker using homemade taco seasoning, this makes enough meat for several nights so we usually have tacos one night and I’ll use the rest of the meat for leftovers over tostadas, taco salads or to freeze for another night. The slow cooker is great for making taco meat, especially when using lean ground beef like I use here because the slow low heat makes them come out very tender. Can also be made with ground turkey or chicken or swap the taco shells for lettuce wraps to make them low-carb.

Broccoli Rabe and Sausage Parsnip Spiralized Pasta
Broccoli rabe and spicy sausage are one of my favorite pasta dishes; this spiralized version made with parsnips in place of pasta for a hefty serving of veggies won’t disappoint! If you don’t like the bitterness of broccoli rabe, broccolini or broccoli would also work in it’s place. A quick, one-pot dish that comes together in less than 20 minutes!
